I started out with a Bradley smoker some 12 or 13 years ago. It was not well made and failed after a few years and I've had a Smokin It 2 for some 7 or nine years I don't actually know. I love smoking meat and right now have some fresh redfish fillets on the 2 with hickory. I'm always interested in things smoked! Looking forward to learning more about pork, beef, seafood and chicken. Also other tips and tricks. I put aluminum foil on the bottom of my smoker and over the top of the smoke box to protect it. So I'm looking for tips and suggestions like these from the learned ones ...
