Thanks everyone, it was definitely a fun learning experience. Last of the leftovers disappeared today for lunch today. 
Guess it is time to start thinking about the next smoke. Probably something more normal like a few chickens, then on to some jerky if the weather ever gets nicer. That shiny jerky fan just smirks at me from the shelf as I dig things out of the deep freezer. Some day it will have to work for a living...
