I received my new model 3 in Idaho yesterday (Tuesday) after ordering it on last Friday. That is some seriously fast *free* shipping from Michigan. Ran it through TWO seasoning cycles for an extra layer of smoke, then tonight put in a sacrificial rack of ribs to finish out the seasoning process. Set the dial to 225. Out of curiosity, I dropped a temp probe in there and saw that the smoker was cycling between 211 and 240. Works for me! Other thoughts...the smoker seems to be VERY well made, and will hopefully last me the rest of my life. My only regret is that I didn't splurge on a larger model.
