I have a #2 and just cut enough off to fit the rack with ribs and brisket. I then put the pieces I cut off on another rack. I usually only use two racks this way. Like you I am a senior and only two of us. I am eating a nice brisket sandwich now I smoked 3 days ago. Getting ready for 3 racks of baby back ribs. The # 2 is the way to go.
