It won't fit!

Keep in mind that whatever you order does not include shipping unless you pick it up. I had to add $175 for shipping my #3. Also like others stated, I want to be able to put full racks of ribs without cutting them in the box and not worry about how to fit them. That was my reason for buying. I will probably never fill it up.
.
Yep, I hear you loud and clear. Shipping for #2 is almost $70 and certainly something to consider.  :(

Ralph,  unless you really feel the need to smoke lots of big, whole, packer briskets and full (uncut) racks of ribs, the #2 will serve you very well.  I've done full packers in mine, up to about 11 pounds.  Even if I had a #3, I would still halve my rib racks; that way, I can put the thick ends on a lower rack, and the thin ends higher - they cook better that way.

Lots of opinions and options, but you need to let your needs, not opinions, determine your ideal size.

Thanks again Tony for your input as it is much appreciated. Sometime yesterday it clicked in that I really only needed a model #2 but I decided to sleep on it. No change this a.m. I will be ordering model #2 today.
Hopefully Steve won't call out the firing squad for my back-and-forth ordering.  ???

Congrats on making your decision. Now you can start the decision on your first smoke. ;)

I would recommend a Boston Butt. It is a super easy smoke and really gives you a feel for your new smoker. Tony has a good write-up with his Butt brine (highly recommended) in the following post:

Hey Gregg,

Thanks for the tip but I'm the previous owner of a #1 and have brined/smoked butts in it using Tony's advice, etc...

Ralph  ;)

So many choices, so little time....  :) Enjoy the first smoke. You will love it.

Thanks Bob,

I have Ribs, Turkey and a Butt ready to go and it will probably be the Butt  ;)

Good old Steve has already sent tracking number.. I see he no longer uses FedEx but hopefully UPS will be as efficient.  ???

Cheers, Ralph

Yeah Ralph, I keep forgetting that you already had a #1.

So, you could/should be telling me some things. ;)

I've always had really good luck with UPS. I doubt you'll have any problems. None of them are perfect and will occasionally damage an item. But, when you consider the amount of packages they deliver, I think they all do a pretty good job.

Ha ha, Nope.. not an expert and far from it but I'm not a total newbie either.. lol

I will continue soaking up smoking lessons from you and the others here that have far more experience. Everyone here has always been very helpful.

Cheers

Thanks Tony, I'm looking forward to some good smokes. 1st on the list looks like it might be a 10 lb Boston Butt.  :)

Just took a 12 pounder out of the bath, currently rubbed, ready for smoke starting tonight! Gonna be a great weekend.......
