Where do ya'll usually get your brisket?

I was in Wal Mart today and the brisket they had, had a thicker fat cap than flat.  LOL!

Hit and miss sometimes, I guess, Dave.  Hate to pay for fat, but it can always be trimmed, if the meat looks OK, and the price is right!

The one I got from Wally World was pretty good looking.  Didn't have to trim much to get the 1/4" fat cap.  Got it trimmed pretty good following Aaron's YouTube video.  Got it marinating for its date with the SI3 tonight.

Finally got my heatermeter PCB, going to be building that once I get back from going take 6 month old photos with my daughter.

Late to the game but flat cut at Costco $6.99 lb for choice. Naples, FL

Little late here, but by local Costco has Prime packers for $3.79/lb, however Choice flats are $6.99/lb....

Great deal on the packers, and always the best choice!  Why pay double for a flat only?

Packers have quite a bit of weight in the fat cap from what I've noticed. Next time I do one I should measure the weight of the fat cap portion I remove. I try to get it down to about 1/4" before cooking.
