What's everyone cooking for the 4th of July weekend

That's a spread anybody would drool over Dave! We had a great time over here with family and friends. All said the Q was the star of the show, kudos to my #3 and John Henry East Texas Pecan rub. At this point most of the ribs are gone(four racks worth)as well as the beans. The Watergate salad was gone almost immediately and it's the one thing I didn't get a pic of. The nanner puddin is well on its way to oblivion.  I sincerely hope everyone has had as enjoyable a 4th of July as we have. I truly believe being born in this great country of ours is like winning the geographic lottery. Pics below

Well your spread would be hard to top Dale. The color on those ribs looks perfect and sounds like family and friends all agreed that the looks arent deceiving.  Its been a good holiday here as well and YES we are privileged to live innthis great country where folks can even smoke tofu without fear of imprisonment ;)

The cabbage turned out pretty good. Too much red pepper for my taste though, which kind of ruined the taste for me. My mouth was burning eating it. Smoking on my stick burner at the lake renewed my appreciation for my SI. I think in the future if I am going to smoke something, I will either pre-smoke and reheat or haul the smoker out to the lake. Going forward the grill/smoker will only be used to grill. If I do this again, I will cut down on the red pepper and smoke in my SI.

The pulled pork tacos, on the other hand, were an absolute hit. This was the first time that I had done this and even my picky 11-year-old nephew ate 3 tacos and had to have them for the next two meals because he didn't like what was on the menu. Between 6 of us, we ate almost a whole 8lb Boston Butt! I will definitely be doing this again!

No pics of the tacos, but I did take some pics of the butt and the pulled pork to prove that it did happen. :)

The pulled pork taco's sound really good.  I have made pork nacho's before with my pulled pork and It is awesome.
 
Pulled pork tacos are great!  I've added taco seasoning to reheated pulled pork, but never used it as a rub on a fresh butt...gonna have to try that!
 
Taco's Nacho's...............it all works with pork!
