Smoked Corn Bread

Last year we ate at that fried chicken family place in St. Augustine (forget the name). It was the first time I had the datil sauce and really liked it. I brought some home and it's now gone. I can't get it locally so I have to get back there to get some soon. Very interesting flavor.

I buy it in the powder form and it works great for baking or added to BBQ sauce. If you are interested I could send you some?

Not a problem this is a great place to visit, just don't plan to come when the King of Spain is here. It will be crazy since this is the 450th anniversary of the city.

My latest fave is the Jiffy cornbread casserole.
1 - 8 oz. box of Jiffy cornbread mix
1 cup sour cream
1 stick melted butter
1 can cream corn
1 can sweet kernel corn, drained
1/4 cup sugar
1 1/2 cup grated cheese, divided
Mix all ingredients minus 1/2 cup of grated cheese and put in a greased pan. Sprinkle top with remaining 1/2 cup of grated cheese. Bake at 350 for an hour.

This has been on my list to smoke.

Looks like a great recipe and the smoke could only make it better :)
