Doing a test run, the small (6x6) amzn dust, drip pan and wood box removed, and after 2.5hrs, still going strong...outside temp is around 50f and the maverick is registering 71f right now in the middle of the rig. I think I'm going to be OK for a tomorrow big cheese smoke. (got about 30 lbs to smoke this week-end)

Please start a new thread in the cold smoking area and let us know how it goes. I have a pile of cheese in my fridge ready to smoke next week. I let my smoked cheese supply go get down to nothing this summer and plan to smoke enough to prevent that from happening again this year. I guess you could call that a New Year's resolution huh?
