Here is a picture of a PID controller that I made to control my electric and charcoal smokers.

I also use this design for my sausage curing chamber or any application that I need thermal control.

Right you are.  I was looking at the BBQ Guru which is a nice set-up but I was like I can make this for less than I can buy it.  I also used this set-up to revive a couple old MasterBuilt smokers.

If I could do metal work, I would be all set.  ;D

I use a thermoelectric cooler and a radiator inside the cabinet for cooling.

The TEM cools the water that flows through the radiator.  I have a PWM controlling fan speed.

I use a PID controller to monitor and control cabinet temperature.  I have an ultrasonic humidifier hooked up to an Auber humidistat.  The humidistat also controls a purge fan that purges moist air out of the cabinet through 2 one way valves.

If you will be operating in humid conditions, you will need a dehumidification scheme.
