Just purchased 10 pound packer brisket and slicing knife

Congrats.  You should absolutely try the other methods.  Its easy to dismiss alternate methods but best to give them a try at least once for your own education.  Let us know the outcome.
 
I recently had the opportunity to share some incredible ribs and brisket with a competition championship pit-master. In his cooking, he was very clear to say that when doing brisket, only use salt and pepper. I thought that was something I will try. I haven't tried a brisket yet, but that's what I will try first. I would love to do the whole packer, but I might just try the flat first.
