Jerky without fan

Probably but you will have to open the smoker periodically to vent the moisture. Might get fair to good results but not optimum.

I don't have the jerky fan either. In the year+ of making jerky in my 3D I haven't opened the door ever. I run the temp at 155F with either dry rub or wet sauce/marinade. ~6 hours per session.
