John, all kidding aside about the difficulty of plastic wrap ??? - Here's a suggestion that might help others. When I smoke anything, I use a 4' plastic folding table next to the smoker. This is a long enough platform to set the 18" plastic, or foil, box on the end and just pull it out to length, right there by the smoker! No fumbling around in the kitchen. It's like an easy-to-clean and store prep station, right next to the smoker! When I'm getting ready to wrap finished meat, I pull out 2 layers of foil on the table. I could just as easily pull out 2 layers of plastic, too. The shelf comes out of the smoker, and the meat is slid onto the foil - no need to pick up delicate meat that will fall apart! Slide, wrap, and into the cooler (waiting by the table)!
Jeff's right, also, about the plastic wrap box from Sam's (18") - no problem pulling a long section out and cutting it!
