Between my Sons, Dad, Brother, and Brother-in-Law we usually process 3-6 deer and 2 hogs per year. It is a big family affair every year. We all love doing it.
Don't get me wrong. I don't have any problems with Aubers. I just haven't been able to afford one yet.
If you have a dehydrator, you can smoke your jerky for a couple of hours and move to the dehydrator. But, it would be hard to do sausages without a dryer.
Since I do not have an Auber, I usually run my temp at about 125 and use chips that start to smolder/smoke faster than chunks.
I definitely do see an Auber in my future though.
