Being single I went with the model 1. I gave my larger masterbuilt to one of my members at church who is "down on his luck." When it came in, this past week, I decided to do some baby back ribs. Because I'm used to adding wood throughout the smoke I decided to add "extra" wood at the beginning of the smoke. I could not see how 3 or 4 ounces of wood would be enough for a 5 or 6 hours of smoking. I ended up using 8 to 10 ounces of wood. When I pulled the ribs out of the smoker they looked great! Couldn't wait to get into them. Got my plate filled and sat down for dinner. Took a bite - they were tender. Then it hit after about 3 seconds - kerosene = creosote. I know the veterans are laughing right now. I spit the bite out and threw the ribs away. The worst ribs I have ever eaten. Well, yesterday, Saturday, I decided to cook some more ribs. This time I threw away everything I thought I new about smoking. I printed off the file from one of the threads about types of wood, temp, length of smoking time and how much wood to use. I also used the wood I had bought from smokinlicious (Donna). I used 3.3 ounces of wood and I was very skeptical about this second smoke. Only 3.3 ounces - no way! Smoking was done. Resting was done. It was time to eat. I haven't had ribs this good since I left Alabama over 25 years ago. No BBQ joint in Alexandria comes close. Only a 3 ounce wood chunk. Unbelievable!
This unit, hands down, is the best there is. No debate. The price is very reasonable for a smoker of this quality. I can't believe a process this simple and easy to use smoker produces BBQ this great.
