Being single I went with the model 1. I gave my larger masterbuilt to one of my members at church who is "down on his luck." When it came in, this past week, I decided to do some baby back ribs. Because I'm used to adding wood throughout the smoke I decided to add "extra" wood at the beginning of the smoke. I could not see how 3 or 4 ounces of wood would be enough for a 5 or 6 hours of smoking. I ended up using 8 to 10 ounces of wood. When I pulled the ribs out of the smoker they looked great! Couldn't wait to get into them. Got my plate filled and sat down for dinner. Took a bite - they were tender. Then it hit after about 3 seconds - kerosene = creosote. I know the veterans are laughing right now. I spit the bite out and threw the ribs away. The worst ribs I have ever eaten. Well, yesterday, Saturday, I decided to cook some more ribs. This time I threw away everything I thought I new about smoking. I printed off the file from one of the threads about types of wood, temp, length of smoking time and how much wood to use. I also used the wood I had bought from smokinlicious (Donna). I used 3.3 ounces of wood and I was very skeptical about this second smoke. Only 3.3 ounces - no way! Smoking was done. Resting was done. It was time to eat. I haven't had ribs this good since I left Alabama over 25 years ago. No BBQ joint in Alexandria comes close. Only a 3 ounce wood chunk. Unbelievable!

This unit, hands down, is the best there is. No debate. The price is very reasonable for a smoker of this quality. I can't believe a process this simple and easy to use smoker produces BBQ this great.
 
Hey Don, since I've had my #3 I haven't stepped foot in a barbecue joint. I don't miss it either because the Q coming out of my SI is way better not to mention way cheaper. Keep that smoke rollin'.

Hi Dale, I will be doing the same. I went to a Q joint yesterday to buy some baked beans and potato salad. I didn't order any Q. They thought that was strange.
 
Hard to believe, I know, Don!  But you've made one of the best secret discoveries known to BBQ!  And the beauty is, too, that you could actually taste the flavor of the wood, not the heat source! ;)
 
Tony it's hard to believe you can get that kind of smoke flavor from only 3 oz of wood. I would have never thought an electric smoker could produce that kind of flavor. Like Dale, I will never set foot in another BBQ joint. This is the cheaper way with the better taste. Also a great company to work with.
 
Don, I was amazed, too!  Now, I actually consider the smoke flavor profile just like any of the spices I use in prep!  I can actually tell the difference between, say, red oak and white oak!  I have found the woods that work best with each type of meat, and desired result.  You will, too!  The smoke flavor is clean, and distinguishable, unlike in traditional smokers.  It's a fun process to find the woods you really like, and the ones not so much!  Godspeed on your journey! 8)
 
I'm still chuckling Don.  Sorry.  I completely ruined a butt once; 12 ounces of wood, so bad even the dog wouldn't touch it. Most of us use a digital scale (I use an OXO) and cut the wood to our desired weight.  Worth it's weight in ribs.  And before I forget,  welcome from SE Arizona.

Could be an ad line but Don but now that you are a believer ;) you are gonna enjoy, due to no effort on our own part, some really great lazy man Q !!
 
Hilarious story! I think just about everyone coming from another other smoking background has made the same mistake with too much wood early on. We've all been led (or misled) to believe that in order to make great BBQ, it is a long, complex, hands-on process. You are one of the lucky ones to discover the secret. I love my #1. You will too!

Tony, I like this analogy. You have a great board here. Good info from the experienced members. I have read a lot of the threads and gained good info.

David thanks for the welcome. I have never heard of weighing wood before smoking. And it is funny how that first set of ribs turned out. The worst I've ever had.

Dave that wasn't intentional, but you're right. It could be use as an ad line for a commercial. lol. It could be a Freudian from my early years when I was in management and sales. I wrote a lot of ads.

Kari, I found the SI #1 by accident. I was looking for a small electric smoker. I did a search on the net for a small electric smoker. Found this one on Amazon. Read the reviews and saw that it was from Smokin-It website. I went to the forum and saw all the positive responses for the Smokin-It smokers. Between the reviews on Amazon and within the forum here, I ordered the #1. It was an excellent purchase.

After smoking my second set of ribs I wrapped them in foil and a towel and could still smell them in another room. I knew then they were going to be good. You could tell by the smell. The first had none of that. They were really bad. Looking back on it now, it really is funny.
