Famous Dave's Rib Rub

I think I have the same rub. I love Excalibur seasonings and my go to seasoning is Excalibur Smokehouse BBQ seasoning. I buy it in 5lb bulk bags.

I got this Kansas City Rump Rub from my last Walton's Inc order for free because I ordered enough stuff.

I haven't tried it yet, but it will be in my next butt.

I definitely will. I have a butt in the freezer with it's name on it. But, I have Canadian Bacon loins brining in the fridge and don't really have room in the fridge for more meat. I really need a dedicated meat fridge. Plus it is freezing ass cold up here this week, and while the smoker can definitely handle the temps, I'm not excited about the prep and cleanup in -15 plus weather. ;)

The Kansas City Rump Rub has MSG, so not so good for you Tony. I'll get this rub tested and reviewed some time in January.

But the Excalibur BBQ Smokehouse seasoning is MSG free. :)

Yeah, the MSG can be a problem for many. Fortunately I'm not one of them.

I love to try all kinds of rubs. I have a cupboard full of them. One of my favorite things to do is try different ones all the time and I love looking in stores that carry specialty seasonings.

Admittedly, I haven't made many of my own, but have several recipes saved in my to try recipe folder.

Same boat, Walt!  One bite of something with hidden MSG and the wife has a migraine within an hour!  Really weird, but sure happens.
 
Wow found a famous Dave's restaurant about 15 min. from my house in Independence, Mo. They have it for $3.89 per bottle or 12/$44.00. Might have to try this one. You suggest this for pork but not beef???
 
That's a great price, Bill - as cheap as Amazon.  I only use it on pork, and have actually never tried it on beef, simply because I have my all-time favorite Jim Baldridge's Secret Seasoning for beef.  Fantastic on all pork, though!
 
Does this sound like the correct flavor profile for FDR? I have never had it.

Brian, I think it's along the right track, but not that close.  I made a small batch of this once (trying to save some money), but it wasn't right.  I think some of the ingredients are dead-on, like the original Mrs. Dash (the bottle shows a lot of the dried veggies in Mrs. Dash, and they even look similar in the rub), but I don't believe the chili powder and cloves have a place in it.  FDRR is pretty light, and doesn't seem to have a chili powder or paprika look to it (or flavor).  Also, they substituted lemon pepper for orange peel, and I don't see the parsley in it.  They added a lot of celery - both salt and seed. 

You're quite the expert on seasonings, with your charcuterie/BBQ background.  I'd be interested to see what your opinion is, if you try a bottle.  I hate to say that an off-the-shelf rub is still my favorite on pork, but it is.  I think the dried veggies and orange peel are probably the most important keys to a unique flavor, in Dave's rub.

 
Hey Tony, I have another store in Kansas city, called Kansas City BBQ Store, they have Jim Baldridge's Secret Seasoning for beef. Also going to try John Henry's Pecan Rub and John Henry's Wild Cherry Chipotle Rub. Also got suckered into buy a rub from the Texas BBq store when purchased their gloves did not have enough in the cart. Soo ended up buying one of their rubs. So will find something I like and stick with it. I really would like to find one that is good on both pork and beef. Don't really care for poultry or fish... Except a good fried chicken.
 
I can say this added a bark really dark to the ribs. They are still in the smoker but when I added sauce they looked just like what I would get at Gate's BBQ and a lot less money.

John, I've seen you mentioned the Oakridge BBQ Rubs a couple of time and decided to try some out. I ordered some of the Secret Weapon rub today.

Pic is in the first post.  That's the only ingredient list I have.  Copycat recipes out there, but I don't think they are remotely close.
 
Thanks Tony, I missed it first time through the pages.  Sounds pretty simple and something that can be easily modified one so chooses.
