Hey John, I am one for cutting my full slabs into St. Louis style ribs. For the left over meat, I save it and when I get a full gallon zip lock bag full, I smoke the meat and use it in my baked beans. Just cut it into small pieces and into the beans. Really adds great flavor. I normally smoke it the same as ribs. But, might have to try frying some of these up.
