Chicken at 20 below

Arnie, tell us again how great it is in July and August. And include the humidity levels when you remind us.  ;)
 
Ah Tony, that's the best time of the year for fishing, boating, and swimming. Also, extremely high air conditioning bills...lol

OK, one question I had was about "took out the backbone and breastbone;"  in the "done" picture, the breast looks to be very much intact.  How did you remove the breastbone, and keep the chicken looking like that?  When you spatchcock a bird, it folds in the middle, so I'm curious about this.  I'd love to be able to remove the breastbone and have a chicken that looks that good!

The chicken appears to have the breast bones in tact because I rolled the bird and smoked it in that position.  There are many videos on You Tube to show the breast bone removing process and I watched a few of them. Skin is the only thing holding the bird together.

Okay, with that said, let's get back to talking about the weather. To hell with the chicken. We are scheduled for 36 degrees next week.

WHOA! Summer is almost here.
 
My deep freezer is thawing... Just glad it's my outdoor one! I was starting to wonder if we would ever see outdoor warmth again.
 
It's not just the smell that attracts people.  When I have the smoker in front of my garage, the cars slow down as they pass by. I am going to have to lock down my #3.
 
I started seeing the first signs of my yard yesterday. Before that it was nothing but white crap still covering the ground. Today things really started melting good. I don't think I'll be cutting grass for another 3-4 weeks though. Maybe longer.
