Great tips on storing the leftovers!  Now I'm gonna have to do 2 more butts this weekend. Darn it...     This may sound like a dumb question and has probably been discussed several times, but do you guys smoke fat side up or down in the Model 3?  My previous experiences with other smokers, it depended on how I was going to serve the butt (pulled or sliced).  Thanks!

Sliced or pulled I always go fat side up.
