Bark and smoke ring?

Thanks Greg and jimmy.  Wow. Did not realize could smoke to such low temps.  Good news being from Colorado.  Leaning towards the # 3 from all the input.
 
Sorry I'm late to the party, Wannabe!  Been having some internet issues!

The guys have definitely steered you right!  You will have no regrets going with the #3.  It's a beast, and you can always smoke less in it.  Like Brian said, bark is subjective to each of us.  But, that is something that I have NEVER had a problem with!  I like good, chewy, flavorful bark, and never fail to get it.  The more time you spend here, learning prep and smoking techniques, the more you will discover how to achieve it.  Bark is just as much a product of the right prep, as it is the smoker.  Sometimes it's the arrow, and sometimes it's the shooter, but the best combination is both!
 
Thanks for the input divot maker.  Gonna be a steep learning curve to start but hope to produce some decent quality meats before too long. Been quite impressed with the willingness of members to help out a wannabee
