What's on your 4th menu?

I am putting on a spread here at the RG house. I am doing a "Throwdown" over on the Keg forum, so I'll be firing up both kegs but I am sure the SI will see some action as well as the Traeger.

The menu looks a little like this :

APPS
3 Pounds of Moinks Glazed with my Chipotle Beer BBQ Sauce (Done on Keg)
Atomic Buffalo Turds (Done on Smokin-It or Traeger)

MEAT
13# Choice Brisket injected with Fab B Lite Brisket Injection and rubbed with Kosher Salt and Coarse Ground Black Pepper (Done on Keg)
3 Racks of Baby Backs Glazed with my Chipotle Beer BBQ Sauce (Maybe split them up - Keg, Traeger, SI each get a rack!)
3 Pounds of Hot Links (Done on Keg)

SIDES
3 Bean Baked Beans (Done on SI or Keg)
Red Potato Salad
Grilled Garlic Butter Texas Toast (Done on Gasser, gotta get the whole gang involved!)

CONDIMENTS & SUCH
Fox Bros BBQ Sauce (Regular & Spicy)
Chopped Onion
Famous Dave's "Devil Spit" Pickles

DESSERT
Homemade White Chocolate Macadamia Nut Cookies (Done in the oven)

So, you see I have a lot of prep and cooking in front of me. I am about to prep the moinks, turds and beans, inject the brisket and peel membranes off of Ribs). THEN, maybe I'll get to go shoot some pistols with the wife, lol!

Now, what are you, my fellow smokers and grillers, cooking for the 4th?
 
Wow Jason, it looks like you will be having a feast indeed!

I have 11# Angus Brisket that will going in the smoker before I got to bed tonight. Most likely we will enjoy it with sweet potatoes and homemade bread.

This afternoon I will be making up a batch of Blackberry Turnovers.

Sounds awesome!  I'm about to go pick up a brisket now. I'd like to inject. What's the recipe for the inject you are doing?
 
We are expecting rain most of the day on Saturday, so no smoking for the 4th.  However, I am taking the plunge with a brisket for the 5th!  Probably add some baked potatoes to the mix as well.

I'll be cooking some St. Louis cut spare ribs in the SI#2 and also some hamburgers and hot dogs on the Weber Kettle grill.
 
Man, Jason, that sounds like quite a feast!!  We're just doing pulled pork (from last weekend) tonight, as I have to work the weekend.  Unfortunately, I can't smoke anything this weekend. :(  You all have a safe and happy 4th!

I have never even set foot in a Famous Dave's. There used to be one about 30-40 minutes away from me but it closed down years ago. I bought the Devil's Spit pickles at Kroger though :P

JC, that's good old butcher paper that I just cut to put on a half sheet tray for the display. It did the trick, made the food look like it was from a restaurant. The little paper trays and condiment cups didn't hurt either, lol. The bad thing about it was that I ran out of room! It's hard to see the ABTs on there amongst the moinks and hot links. That tray fed many people and there is about 3 times as much as that left. Good thing I have another shift coming up, more guests arriving anytime now ;)
 
Well, it's a great pic!  FD restaurants - for franchise BBQ - are pretty good.  They have a big family platter that looks like your pic, except it's served on a big galvanized trash can lid!  Pretty creative.
 
I've seen Dave on TV a few times. He seems like a cool cat. I am happy for his success. The garbage lid thing is hilarious! I like it, makes me wonder why I didn't think of that, lol.

I appreciate it Greg. It was excellent if I do say so myself but I don't know about Famous Dave's stuff. I imagine for a franchise it's probably pretty good. Maybe one day I'll get to try it. Until then, I'll keep doing my impersonation of it :)
