One more reason I prefer the back ribs.  No, Tom, you are not doing anything wrong...they are more fatty.

should i be trimming them more?  my sister gave me a gift of St louis ribs for my birthday. she  didn't know any  better i guess  ;D

they are in the freezer and i need to pull them but still trying to figure out the best thing to do with them.
 
Tom, if they are St Louis trimmed, they're not as fatty as full spares (with the tips).  But, there's a lot less meat, in St Louis cuts (imo).  If I do spares, I actually like the tips the best!  I prefer back ribs because there aren't two different "sections".  The meat is thicker, and more consistent, from end to end.
