Venison ham...

To bone or not to bone? I have had it boned and it was excellent...not sure of the method to achieve those results but was curious if you preferred one method over the other? Thanks
 
What is your process? I assume if you are making venison "ham" you are curing with Instacure or Prague Powder #1? Bone-in is almost always best.
 
I meant to say that I had it deboned....a local shop done them. To tell you the truth I really dont know how to proceed with making them.
