Unni Pellet Oven

Here is my first time cooking on it. Lots of pictures so you have been warned!

As you can see, by the time the last pizza rolled off of the assembly line, the crust didn't get good "leoparding" on it. The stone lost its Oomph!

I have remedied the issue and replaced the corederite stone with a baking steel custom cut to fit the UUNI 2S. Now my S stands for steel instead of stone :P

I have also fabricated a flame shield in the back to stop the crust from burning should you not rotate the pizza quick enough. The original UUNIs had the flame shield but I think that they took it out when the added the stone to keep the costs down. I think it needs it but you certainly can cook without it as shown in the pics above.

If anyone needs any tips on the UUNI I would be glad to help. I've got her figured out ;)

I didn't bend it symmetrically but it works! If my OCD kicks in I still have more stainless to cut another from.

I love it! I love it more with the mods I made but they aren't totally needed unless you're an obsessive freak like myself! The baking steel gives me far more thermal mass to keep the deck hot for lots of pies. The stone loses it's heat and absorbs moisture so it browns less effectively as the cook goes on. If you let it recover in between pies, 5 minutes or so, it's not that bad. That's what I did on the cook above and it did okay. Pellet choice plays a HUGE role in how it works as well. The "Perfect Mix" pellets from cookingpellets.com is what I like to use the most. The Lumberjack brand isn't bad either. Some pellets burn WAY TOO HOT for this to work well. If you keep your toppings light, you can bake a pizza in 60-90 seconds no problem. Thin base, light toppings (Neapolitan style) and it does wonders!
 
Also they sell something called the "Sizzler Pan" which lets you cook steaks, chicken, fish....whatever in the UUNI. Neat little device and portable.
 
The sizzle pan looks like cast iron which I guess a griswold would do.  Have you tired anything besides pizza?


 
Nah, just pizzas. I have other cookers to cook other things on so I just let the UUNI be a dedicated pizza oven. I can cook pizzas on other cookers like my Kegs but the UUNI (to me) makes them better. My wife fired up her keg today and made 3 pizzas and as I was eating I was thinking that I should've fired up the UUNI. I can't complain though, I didn't have to cook anything so it that counts for something! If I want a larger pizza though, that's where the Keg comes in handy. The UUNI can only do a 12-13" pizza. I can do a much larger one on the Keg. I usually do 15-16" pizzas on the Keg. Today's kegged pies were made from leftover dough that I had frozen and thawed out, they were about 8-10" personal pizzas that were intended for the UUNI.
