Since you are cooking two different types of meat (pork & beef) at the same time, I would go with hickory or oak. While cherry and maple go great with pork, I personally do not like either one with beef.

Thanks, Jimmy! I totally missed the chuck roasts, and focused on the ham! :-[ I agree! No cherry or maple on beef. If I were going to smoke those at the same time (which I wouldn't, actually), I'd just use hickory or oak.
