Turkey Breast

I made a turkey breast this past weekend.
The same game plan as always. Brine for 1 hour/lb and let rest in fridge overnight. It was a 6 lb bird. I smoked at 255 with apple wood. I put on my poultry rub. I took extra time to remove any excess skin. IT 165.
The bird might have been the best one i cooked. Moist and juicy. The family needed a break from ribs.
If you need a break from pork, try turkey!

I can't find a turkey around here to cook! Breasts and legs etc., but no whole turkeys. #%¥£#% it!

I should have been more specific. HEB is where I shop and I didn't see any whole turkeys just parts. I want to smoke a whole turkey. I haven't been in a Walmart grocery shopping in years. To much traffic.

I really have not seen any turkeys either at Wally World. But, have not really been looking for them. I also shop at Price Chopper and not seen any. You might ask the butcher at the HEB if they have any in the back or in the freezer. It might be a little early also to have them out. You could also go with a large roasting hen.
