Trigger Fish with Rice and Beans

I have been doing a lot of smoking lately so I decided it was time to mix it up.

Tonight we had Trigger fish with homemade Creole Sauce, rice and refried beans.

Easy and it tasted great.

If your rice is to sticky use less water. So when a recipe calls for 4 cups of water I go with 3.5 or just a bit more. You can always add more water afterwards and get it more tender, but once its sticky thats what it is.

So for this rice, Vigo, Yellow Saffron Rice, the directions call for the following:

In a large saucepan with tight fitting lid, bring 4 cups of water to a boil.

Add 4 T of olive oil or butter (I cut this in half) then one package of Vigo Yellow Rice, stirring while boiling for one minute.

Cover saucepan tightly reduce heat to a simmer (I have an electric stove set #2) for 20 minutes and serve. * What you want to do is not serve, remove the rice from the heat and allow to rest with the lid on for 30 minutes, this will finish the rice and it will be spot on.

As I said before if you added not enough water the rice may still be a bit hard, you can add some additional water and microwave or put back on the burner, but once the rice is soggy..... it is.

I hope this helps.

The option is to buy a rice cooker, but really I have found less water and less oil makes good rice.

This works for Spanish rice or even Basmati Rice.

Thanks, Greg.  I considered a rice maker too but after talking to a woman in my office that uses one all the time, she made it sound like black magic and couldn't tell me quantities of anything.  I'll try the less water and cross my fingers.

Rice makers are like magic Dave. We have used them for years. Cheap to buy and makes perfect rice every time. I use it to make casseroles also. Real easy to do.  Just add meat, seasonings and anything else and let it do its thing. Shuts itself off.
 
The rice cooker we got for a wedding present 7 years ago is the only thing I remember as a gift and use it a lot.  Well worth the investment.

You dont need fancy its a simple concept.






 
I'll pile on here and give a vote to the rice maker. Great little machine, keeps it warm for hours too! Rinsing the rice to remove excess starch is a must though.
