Today is the day!

UPS tracking shows my packages made it to town carrying my #2 and cart, along with some other items. I will check back in once it arrives. They usually save me for the end of their route, so it may be a long day, a very long day.......patience little grasshopper.....

Can't wait!!!

Quick update. #2 has landed! Boxes unpacked and everything seems to be in order. Started building the cart and will finish it in morning. Want to relax a bit before heading to sleep. Tomorrow: finish cart, mount smoker to cart, break in smoker. I will upload some photos tomorrow.

OK guys. Smoker cart put together and smoker installed on cart. Today I will do the initial break-in. Before I do this I need to confirm that I do NOT cover the firebox and bottom with foil. I have read on this forum not to put foil, but the instructions that came with it says that it is recommended. Just want a final word before going for it.

Now, I also purchased a Maverick 732 thermometer. I know I do not need this for the break-in but am curious as to where most folks place the temp probe in the smoker for the most consistent results.

Thanks in advance!!!

Keith,
I place my probe on the top shelf rear away from the meat.

I just finished installing and auber controler permanent probe that is just over 1 inch from the top as recommended by others in this forum.

Good luck

+1 on the no foil for the break in.  As for the temp probe, I always put it on the top rack in the smoker so it does not potentially come in the contact with any of the meat that I am smoking.  When this happens, you get bizarre temp readings!

Still drizzling outside. I caught the little fella looking out the window.

Too funny, but I am sure the sun will shine again in Texas!  Actually, while I don't prefer it, these SI smokers work fine in the rain as well.

On Christmas day, I had to hedge and park on the edge of the garage.

Good move!  I have done the same on occasion when I needed to smoke and wasn't sure about how much rain was coming.  I purchased a floor fan as well for the garage just to make sure that the smoke was exiting away from the house  ::)

I have had plans to cover the concrete pad where my other pits currently reside, guess I need to snap to it. My garage is not too big to begin with and is currently occupied with a sports car that gets taken care of more than I do........

I really am just being facetious, we do like getting the rain. There will be lots of days to tend the smoker. Another reason to be excited about this smoker -it will get downright hot and humid in these parts. I won't have to sit in miserable pool of my own sweat while it does all of the work, yeah baby!
