Not wanting to have another turkey sandwich for dinner I fired up the #3. On the menu; A 2.5 pound tied sirloin tip roast and a 2.80 pound bone-in pork loin roast. A quick rub down with of Dust with no binder and into the #3 with 3 oz of cherry until 130 IT on the beef and 142 IT on the Pork. The pork took about 40 minutes longer than the beef. I served them with roasted fingerling potatoes & Brussels sprouts with caramelized onions. This was paired with a Leinenkugels Cranberry Ginger Shandy.
