1. Wash outside of Food packages before opening. Especially Cheese.
    Awareness of Germs from other shoppers handling packages with bare hands.
2. Resist the urge to slice into the meat before it rests. Preserve the juices. Thus the
    phrase "Good Meat Deserves a Rest" was coined and added to my signature.
3. How to produce a Smoke Ring!

Probably a few more, but these these were on top of my mind this morning!

Hands down, the smokers from SI are the absolute best bang for the buck. Simple and reliable with predictable results.
 
Things I've learned:

1.  Getting an SI smoker was one of the best decisions I ever made!

2.  Joining this forum, back when it was just a baby - also one of my best decisions!

3.  There's more than one way to skin a monkey!  What I mean, by that, is there are no "right" or "wrong" answers, in BBQ!  Everyone has valuable opinions, and everyone develops their own techniques & preferences!  Keep an open mind, and you will always learn something new!

4.  One of the most important things I've learned? ...We have grown the BEST manufacturer's BBQ forum on the planet!  We have such a great group of folks, are family-friendly and respectful to one another (rare, these days), and all have a genuine love of our addiction, er, "hobby!" ;)
I am blessed to be a part of such a great BBQ family!

Never stop learning!  "When you're green, you're growing.  When you're ripe, you're rotting!"  Stay green, my friends! :D
 
Been smoking for many years, and gradually worked my way "up" to an SI. Reached the top now. Can relax.
