Anyone ever use this recipie/directions?  They advise taking out at 110 then reverse sear at 500 degrees until temp hits only 118.  Then they suggest tent for 20 minutes....

Seems a bit low, but has anyone tried this way?

Followed the recipe to a T and it was perfect!  Pulled the meat at 110, then into a 500 degree oven till 118.  Removed, tented, and within about 10 minutes IT was 130.

That looks SOOOOO good.  I have really wanted to try this but my wife is a "if it's still pink I do not want it!!!" kind of person.  Might have to make it for one. ::)

It was excellent.  I did the dry brine for 24 hours, then unwrapped and let "dry" for another 24 hours or so.  It was really easy and a refreshing change from ribs and pb!
