Texas BBQ Crawl

Well folks, I've decided to take a little trip to Texas in May (if all goes according to plan, I have to move my Daughter out of her dorm first). I am going to drive from Georgia and make a stop in New Orleans to visit a friend and eat some good Po'boys and jambalaya and then plan on hitting The Salt Lick BBQ on my way to Austin. Franklin's BBQ will be the next stop, followed by LA Barbecue and maybe I'll throw in a trip to John Mueller's place. Somewhere in there I'll hit up Voodoo Doughnut for a treat. To break the all BBQ diet. we'll most likely eat some Mexican/Tex-Mex fare while we're there. I am looking forward to it and will do my best to take some pictures and document the trip similar to what Greg did last year. It should be fun!!
 
Sounds like a blast. Make sure you document your trip like Greg did so we can live vicariously through you. :)

Color me "jealous!"  :(

Should be a wonderful trip!  Greg set the bar pretty high for chronicling a BBQ journey....are you up the the challenge?  With your pic skills, and Q prowess, I am prepared to be totally "wowed" at the trip!  Remember...some of us have to live vicariously through the eyes of others, when it comes to BBQ journeys!  lol. ;)

I'm just worried that it'll get scarfed up before the pics are taken, lol. I will be booking a hotel soon just to make sure I don't back out and stick to the plan :)

OK...I see you're point!  That would be my Achilles's heel, too!  I know we'll see some great pics, but I now understand, fully.  Now get that hotel booked! :D
 
You have to keep in mind that my Wife booked these rooms. One night in New Orleans, 2 in Austin 1 in San Antonio and that's not even having a room booked for the Monday we leave out. We'll find something maybe in Mississippi, something cheap :)
 
Motel 6 they leave the light on lol I'd really like to see some pic's of Franklins sounds like a great trip!
 
You need to plan to at least hit Lockhart, TX.  It's not far from Austin.  They have 2-3 (depending on opinion) of the top 10 BBQ joints in Texas. I would recommend Blacks BBQ and Smitty's BBQ. Both excellent and historic. Personally, I prefer Blacks brisket over Smitty's. But they are both very unique places that you must visit.

If you can get to Lexington, TX (also a stone's throw from Austin) on Sat morning, you can hit Snow's BBQ. They have some of the best brisket you'll ever sink your teeth into. They are only open on Sat mornings though till they run out of food, which is around lunch time (brisket even sooner). But if you call a couple days before and order some brisket by the lb, they will have it waiting for you.

 
Getting closer folks! I have 24 days to go before I leave out. Between getting the pool ready for the season, moving my Daughter out of her dorm for the summer I won't have much free time between now and then but I do plan on cooking something in the #3 real soon.

Off topic but the last time I cooked in the SI, the smell coming from it wasn't it's usual nirvana, it was off putting a little. Smelled like old grease and it did impart some of that onto the meat, I have wiped it out real good before smoking each time and I always use foil. I am guessing that maybe the racks need to be put in the DW?? I need to bust out the barkeeper's friend on it this weekend to clean the outside of it, any recommendations for the inside?

May need to hit the shelf racks with a little EZ Off...they really get built-up after awhile!  I actually do a EZ-Off clean and re-season about once every year or so.  The door, especially, really gets built up, and I've never regretted taking it down to the metal and re-seasoning.  Just me, though...everyone is different!
