I put a 6 pound butt in the smoker yesterday morning and had no plans but be a couch potato for the day. About mid morning, I get an invitation from some friends for my wife ans I to go wine tasting with them. Leave my smoker unattended? As difficult of an internal struggle as it was, I decided to program the Auber and go have a fun day. We got home about an hour before dinner time and I rushed out to the patio to see what had happened in my absence. The butt temp was at 198 and the box temp was at 187. I had set program 2 to kick in at 197 so it looked like everything went exactly as planned. The meat was allowed to rest for an hour while I made rice and beans for our pulled pork tacos. I still don't like the term, "lazy" but set it and forget it sure can be nice.
