Smokin Tuna?

Caught 23 blackfins today. Anyone ever smoke tuna? If so how???Cant wait to get my smoker!

Aaron Sanchez has a show on that highlighted a smoked tuna taco from a joint on the border in SOCAL. Looked great. Shouldnt be hard to look up. He is a friend and everything he has cooked or recommended for me is dynamite.

Tuna is something I have not tried but it is on my list. I did find a recipe on smokingmeatforums.com.

Here is a recipe that looks really good, I am going to see if our local fish store has any tuna. I think this is a recipe to try and then reverse sear them on the grill.

Tim,

I had friends last year go to Alaska and they caught tons of tuna. They were able to have it canned, don't know if that's an option for you.

Tuna in Alaska?  Huh?  No wonder the ice is melting! 
 
The show is "Taco Trip" episode 3. Unfortunately the smoked tuna was purchased & it just shows the assembly of the taco and sauce.  I think I would use a dry brine for 4 hrs, rinse, sit on rack in fridge for another 4 hours, smoke useing a light wood until IT 135 & then follow the assembly instructions on the above episode. Good luck.
 
Thanks for the tuna tips guys. My smoker is supposed to arrive tomorrow. Did a soy, sesame oil,lemon,ginger and chili marinade yesterday and seared over mesquite charcoal. Good stuff. Can't wait to experiment with the smoker though!
