Smoked Cornbread Jalapeno Poppers

I decided to try something new today, so I made a batch of cornbread poppers along with some cheese stuffed poppers. This was the first time trying the cornbread poppers and they were tasty, but just a bit dry. Next time I will add some sour cream or cream corn to the cornbread mixture.

Ingredients
Cornbread mix
Shredded cheese
Cooked bacon bits
Wood
1 oz. oak
1 oz. cherry
No water pan!
Directions

Cut the jalapeno peppers lengthwise and the remove the seeds.
Make your cornbread per the instructions add the bacon bits; add mixture to peppers and then top with shredded cheese.
Smoke for 1.5 hours at 250 degrees, remove and eat!

*Note I use a very basic cornbread recipe for this, Self  rising cornmeal, water, oil, egg and milk.
The cornmeal was a little dry, next time maybe add some sour cream.

Tony,

This seemed like a perfect combination and I really did not see another recipe so here you go.

Next time, I will add some additional moisture to the cornbread mixture. But overall, this is a keeper.

What all went in the cheese poppers?

The cheese poppers were just 50/50 cream cheese and sharp cheddar and some bacon bits. I was going to add some hot sauce, but forgot!
