This is about 2.5 lbs. Scored it with diagonal pattern all around it. Mustard then pork rub. Smoked at 225 for 2 hours with 2.5 oz of hickory. Basted with bbq sauce apple juice mixture then back in for an hour. I'll slice it about 1/4" thick and grill it to brown it up a little and melt some cheese on it. Then put it on a sandwich with creamy horseradish sauce. Doesnt get much better.
