I went to Sam's this week to buy a pack of pork shoulder so that I could smoke one this weekend. I picked out a 15.5 lbs pack thinking that 2 - 7.5 lbs +/- would be about right. What I found when I got home was that there is one big bubba butt and a smallish little brother. I'm going to get the little one out of the way so I put it in brine this morning. I've bought a lot of double packs and have never seen such a disparity in the sizes of the cuts.
