Seasoning the little guy

Hello, just got the little guy today. Wiped it out, plugged it in and put a larger block of wood in the back and a smaller one in the middle. Turned it on to 250 and let it go for 4 hours. 2.5 hours in had good smoke ( as to what I imagine good smoke is) but about the 3 hour mark, I had to look and saw little smoke coming out. At the 4 hour mark, I turned it off and opened the door. The inside was covered in seasoning from smoke(?) But the larger block of wood at the rear was 1/3 not ash. Was a coal like smoldering but not ash for sure. Is this ok or should I continue a little more seasoning the smoker at a later date before I add food?

No worries, your burn in was perfect.....

Most of the time you will have wood that is burned, very light but not ash.

Ok. Thanks for the quick reply. Also wanted to mention I got the electrical cord hangers and and ash tray with my order. My understanding is those aren't normal items and I'm really glad to get the extras. Looks like I need to add some rib racks and a cover to my collection soon as well.
 
Sounds like you need to do more seasoning - except, this time, with meat in there! ;)

It would be great to get a first name and town in your signature line - we sure like to know who our new friends are, and what neck of the woods they're from!
 
Might ask some of the other #1 owners, but for the #2 the general consensus is that the rib racks just aren't worth it.  I bought them and my one experience was less than stellar with little to no bark and they were still tough when the ones laid flat were done.

Do you mean the drip pan, that slides under the smoker?  You definitely want to have this in place when smoking!  Also, the rib hooks are worthless; don't even mess with them.  Just lay your ribs bone-side down, flat on the shelves....absolutely the best results!  Rib racks are OK, if you're cooking a lot of ribs.  The drawback is the ribs standing on edge; all the good juice runs off of them!
 
DM I think he means the chip screen, quite a useful addition. The chip screen and the cord hangers are the current giveaways-I got those with my latest #3. I agree that the rib hooks are useless.
 
Place it in the bottom of the wood box so that you can use wood chips as well as wood chunks for your smoke. It stops the chips falling through the larger holes onto the element. I just leave mine in all the time and can then use a mix of chips and chunks if I want to.
 
Would lining the bottom of the wood box with heavy duty foil allow chips to be used? I think ill try it and see.

Dale, yes the foil in the bottom of the fire box works fine. I have done it that way numerous times with great success.
 
Hey Dale am surprised you did not get the chip screen with your smoker. I received it and the rib hooks with mine. Also had the cord hooks not sure why I received all three but figured I was lucky.
 
At different times during the year, Steve runs specials on SI smokers where he throws in different items.  I suspect the deals were different at the times of purchase.
 
I got a cover and rib hooks. I lined the bottom of the smoke box with foil and used cherry wood chips to smoke a chicken Sunday and it worked great.
 
Sounds good, Dale!  The purpose of the chip screen is to keep wood chip ashes from dropping down on the heating element, but foil accomplishes the same thing!    Cherry wood and chicken is a match made in Heaven!    Cheers
 
Are wood chip ashes getting to the heating element a problem? I have chip screen but I didn't know of a concern for keeping ashes away from element?
