Seasoning my new unit

I am in the process of seasoning my new #2 and I am scratching my head.  I purchased a Maverick ET-732 and calibrated it with boiling water last week.  I put the probe in the smoker to see what the box runs at during the seasoning.  Started up the unit, set it a 250 and away we go.  It has been on for 40 minutes now and I am seeing temperature swings up to 320 degrees.  Should I see this with the smoker being empty and all or should I have a concern?
 
So the unit has been running for 70 minutes and the temp is now reading 255, so I am guessing that a wild temperature swing is nothing new when the box is completely empty.  Any thoughts on this would be greatly appreciated.
 
Welcome, Milleti!  Congrats on the new smoker!  Trying to test temps with a totally empty smoker is an exercise in frustration, for sure!  You need something in there to act as a heat sink, or you're just dealing with reflective surfaces that don't absorb and hold the heat.  Swings will be big!  Also, seeing your top temp, I would guess that you have your temp probe pretty close to the element, which may not accurately reflect the actual box temp.

Run your Maverick in there when you have a load of meat and water pan in it; you'll see a big difference!

If you have the smoker maxed and have warm weather you could definitely see temps about 250.  i know when I foiled my ribs (I don't do that anymore after Tony yelled at me, just kidding!) toward the end of the process even at 240 the temp would be over 250.  It's ok. Once you use the smoker a couple of time you will find the temp ranges.

I never YELL, though I may Encourage with Volume and Vigor! ...at least that's what I tell my son! ;D
