Saving au jus from my smoke?

I usually toss at least a pint of leftover au jus from almost every smoke.  I got to wondering if I froze it, could it be used as injection for my next smoke?  Would it be good?

Hey Dave,

I have never kept the left over to inject, but always save left over Au Jus and gravy and freeze, it tastes great.

So best guess is yes...

Are you talking about the juice in the external drip pan, or something you've collected in the smoker?  If it's the drip pan juice, I wouldn't chance it!  Raw meat juice, at "room temp" for extended period of time...yikes.  Nothing tastes "that good" to risk getting sick!

Hey Dave,

No this is Au Jus that I make before the smoke. I may add some of the juice that I collect in the foil to the Au Jus, but not a drip pan.

Thanks for clarifying - we have people confused about what they catch in the drip pan.  Now...what's it going to take to get you to stop calling me "Dave?"  LOL!! ;D ;D

Dave,

I don't see why not, just strain it and if you are worried about that it sat out to long, bring it to a boil, cool and freeze. You also save it later for Au Jus for leftovers.
