Salvaging A Less Than Perfect Result?

I smoked up my pork loin turn Canadian bacon last night and found the results to be under my expectation.  I am a salt lover to the core but this was a little salty even for me.  Any recommendations?  Possibly add to some non salted foods to even it out like a stir fry?  Or list/confess some fails and what you did to not make it a complete waste.
 
Slice it thick and serve it in beans.
Slice it thin and sear it with breakfast.

Let it rest a few days often the saltiness calms down.
