Ribs - Multiple Choice

One and of baby backs and one rack of boneless country style.  Both with Famous Dave's and Bad Byron's Butt Rub.  175 for 40 minutes and then pumped up to 235.

Looks good Dave. I haven't tried country style ribs yet. Are those just boston butt sliced up in rib size chunks?
 
Country ribs are boston butts cut up.  Around here they come with a bone in (or partial bone)

I would think, boneless are quicker cook time.

They just melted with every bite.  It was one of those lucky smoke days when everything was just the way you want it. 
 
I know with ribs it is just a timed smoke and then the toothpick test but do you do the country style ribs the same way or check the IT?

I was more discerning with yesterday's smoke.  I kept doing taste tests.  LOL!
