Recipe for Smoked Turkey

Does anyone have a great recipe for smoked turkey in the Model 2?  What wood is best for turkey? Is there a great rub recipe for turkey?  If I were going to put liquid in the smoker to enhance the flavor, what liquid is best?  Is liquid even necessary?  Sorry for all the questions, but I am a novice at this stuff.  Thanks.

I tend to check out Jeff Phillip's web site (www.smoking-meat.com) for recipes, and I believe he has a couple for turkey and plans to post some new ones this month.

For poultry, I pretty much use cherry wood.  As for liquid, it never hurts.  However, the last whole turkey that I smoked created a lot of moisture in the cavity, so the water pan in the bottom likely provided no benefit.

PS...I also recommend brining the turkey.

For whatever recipe you end up using, I agree that you will want to brine.

I do not ever use extra water pans for poultry. There is plenty of moisture in the box, and assuming that you are smoking with the skin on, the water cannot really penetrate and do you any good. If you are smoking skinless poultry, then I would add the water pan.

You could add a couple of bricks next to the smoker box though that would add as a heat sync and help stabilize the temperatures.

Hey Steve, pretty popular topic this time of year. ;)  Here's a similar thread, recently started by another new member:

Check it out, and the links in it.  Next, go to the "Chicken and Other Fowl" section, and type "Turkey" in the search box (upper right).  Lots of results!
