Prime Packer Brisket

Costco / 3.49lb.
11lb USDA Prime Packer.
Cooked at 235 for about 11hrs.
50/50 Salt & Pepper Rub.
Foil wrapped 165 with
1/4 Worcestershire 1/4 water.
Mesquite Wood.

Turned out very nice. No complaints.
I think my next one will be the same, but with no foil, let the machine run without opening.

Well done! I was just at sams club and the select packers were 3.48 llb. They had one choice packer for 6.49 llb. I just walked away. That was a great find for you at Costco.
 
Costco is unreal, My local store wants $5.99 lb for Choice, go figure.. I do have a Gordon foods store close to Costco selling Choice for $2.99 lb

Crazy. I know. I have seen this topic come up before.
Prices / quality all over the board.
This is a Business Costco where I buy.
The Costco near my house in Laguna Niguel dont carry.

This is another packer I picked up / smoked few months earlier from same location. 14.77 @ 4.19lb done the exact same way but with Pecan. I would take that price too.

Oh Yeah, Chris!!  Nothing better than a little Santa Maria-style tri-tip over red oak!  Reminds me of the Hitching Post!  Pull it about 120°, and do a reverse-sear on a HOT grill to finish it.  Works great!  I smoke these at 210°, so the pink center goes from edge to edge, and then reverse-sear on the grill.
 
HP, been there one time. Meat over Oak, I dont think it gets better than that does it? I buy their magic dust online, good on everything really. Thanks for the info Tony, will give those temps a try. Think I will use the Hasty Bake for the sear, works great.
