Pretzels Soft / Pretzel Bread / Pretzel Hotdogs
• ¾ - 1 cup warm water
• 1 t active dry yeast
• 1.5 T brown sugar
• ½ t Fine sea salt
• 2 cups bread flour
• 2 cups water (microware for 90 seconds) for bath
• 2 T baking soda for bath
• Course Sea Salt to taste
• 2 T melted butter
• *1 egg white + 1T water optional
Add ¾ water, yeast, brown sugar, and sea salt and flour to bread maker. Put on manual and allow bread maker to mix dough. Allow to rise for 45 minutes then remove from bread machine and turn out onto a lightly floured counter.
Preheat the oven to 450°F.
Roll dough into rope and divide into 6 sections. Take each section and roll into a thin rope about 24-30 “ long. Shape into pretzels.
Heat water in a 8” Pyrex square glass pan in the microwave for 2 minutes. Stir in the baking soda, dip each pretzel in the soda bath for 5 seconds on each side. Remove from bath and place bottom on pretzel on dry towel. Next place pretzel on a parchment lined baking sheet. Sprinkle with course sea salt (don’t sprinkle any pretzel that you want to add cinnamon to.
* To make shiner brush with egg white wash then sprinkle with course sea salt.
Allow pretzels to rise for 20 minutes and then place into oven for 8-9 minutes until golden brown.
Brush with butter and sprinkle with cinnamon sugar mix.
For Pretzel Bread, divide in four, shape either round or long. Bake 15-20 mins until golden brown.
Pretzel Hotdogs: boil hotdogs for 3 mins, allow to cool, dry off. Then wrap with one of your ropes. Add to soda bath for 5 seconds on each side. Remove from bath and place bottom on dry towel. Next place on parchment lined baking sheet. Brush with egg wash and sprinkle with course sea salt. Allow to rise for 20 minutes, then bake for 8-10 minutes.
NOTE: If you are not going to eat all pretzels in a few days, only bake for around 7 minutes, they will be light brown. When you are ready to eat brush with water and sprinkle with course sea salt. Place in over until golden brown.
