Pork butt

Since the temps in NJ will be hitting 70+ tmo, i figured what a way to start the new season.

8lb. Butt
Dry brined overnight
Memphis dust
5 oz of apple or cherry
Water pan
240 until 196. Starting the smoke at 6am.

Really want some pulled pork.

Hey Bob....,.,Was feeling bad for myself as it was 35 degrees when I started a pork butt smoke that was until I caught some of the Den. vs Vill. LAX game. A spring game in the middle of a blizzard..... It will get better!
 
Ed, I have taken to pulling my butts at 190-192 and have found that they are much more juicy than when I used to take them to 195-200. They still pull cleanly off the bone.
 
Over slept, boasted the temp to 255. The butt was done in 6.5 hours. The residual temp went up 3 degrees. Moist and juicy. I did foil at 160.
