Pork Belly Burnt Ends

This is the best thing I’ve made in 2.5 years in my smoker (S1) barely eeking out the win over my smoked rack of lamb. Just fantastic! Big Ups to the OP and his original recipe which I followed pretty closely!

Pork Belly Burnt Ends
1. Got about a 6 pound center cut portion of a big pork belly at my local butcher
2. Cut into cubes
3. Toss in Olive oil and your favorite rub.
4. Directly onto the racks in the S1 for 2.5 hours at 250F with a combined total of 3.75 ounces of a mix of apple and grape woods.
5. Load into disposable aluminum tray and top with heavy does of brown sugar; some long squirts of honey; and a sliced up stick of butter
6. Taste a cube now - I felt salt was needed and added a few nice shakes of my white truffle salt
7. Cover top of tray with aluminum foil and into the OVEN for 2 hours at 250F (there was no reason for me to put back into smoker at this point because the food was covered but of course you could use the smoker here)
8. Dump out the liquid from the tray
9. Place cubes back into tray.
10. Combine the following in a pan over the stovetop and mix and to warm temperature: 2 cups BBQ sauce; 1/2 cup apple juice; 1/2 cup apple jelly; and 4 Tablespoons Hot Sauce.
11. Pour entire warmed liquid onto the cubes and mix lightly to make sure all cubes are covered.
12. Cover tray with aluminum foil
13. Put tray into OVEN at 250F for 10 minutes.
14. Remove tray from oven and get ready for Heaven!
