One of my co-workers puts on an annual pig roast at her ranch and this is the first year that I have been able to attend. The smells wafting through the air all day were great. When dinner time rolled around, the pig was cut and served with all the side dishes brought by the guests. My critique of the pig was that it was very tender but lacked flavor. I will stick with doing butts for now.
