Pig Roast

One of my co-workers puts on an annual pig roast at her ranch and this is the first year that I have been able to attend.  The smells wafting through the air all day were great.  When dinner time rolled around, the pig was cut and served with all the side dishes brought by the guests.  My critique of the pig was that it was very tender but lacked flavor.  I will stick with doing butts for now.

It wouldn't fit my briner bucket or my #2 so I'll stick to butts too.

Its been a while since I had done a pig, but we normally basted them in beer from a keg!

They always tasted great, but lots of work.

Back when we used to do whole pig roasts, in college and the Air Force, the cooks were usually more basted in beer than the pig. ???

Looks delicious.  I usually do a 250# pig on a spit over a wood fire, it's actually a fairly simple procedure...  Fill the body cavity full of cut up apples, onions and garlic.  Inject the hams full of a brine solution, poke holes all over and push in more garlic.  Let it roll above the fire for 24 hrs or so, attempt to not drink so much beer so that you can enjoy the party after being awake for 36+ hrs.  Repeat next year.      Note:never believe anybody when they tell you they'll stay awake from 3am until sunrise to maintain the fire. NEVER
