PID question

I am too lazy to search and read through all the PID info

I assume when using the PID, you simply turn the temp knob on the smoker all the way to wide open and let the PID do the work?

Is that correct?
 
It is correct, however, it handicaps your PID.  In order to get full use of the PID, you need to do a bypass of the SI controller.  Then you can use temps higher than 250.
 
Dave's right.  The bypass is easy, and it takes the stock controller out of the loop.  I like having the Auber in total control of the element.  The stock controller can sometimes effect the performance of the Auber, with regard to really stable temps.

I cooked a chuck roast yesterday, was dry and tough, thinking the factory temp might be off

Would rather do it accurately
 
Do you have a PID, Hunter, or are you considering one?  You might want to share your prep/smoking details with us on your chuck roast.  No reason you can't get it right with or without the Auber.
