Our first smoke with Model 1...

Great turkey breast to start things off. Was very surprised at how fast we hit 165 degrees... a tad over three hours at 240 degree setting... it was delicious. Tender, moist, nice subtle smoky flavor. Used 2.2 ounces of hickory.

Can't wait to try something next... hmmmm???

Wonderful experience. Shut it, start, open it, remove it, rest it, carve it, eat it... so easy, so good.

Wondering if ribs will go faster than expected in the model one... we put the turkey breast on the rib rack in lowest shelf slot... the cheat sheet said 4-6 hrs... we hit 165 at 3 hrs 15 min.

Loved the Maverick delight. That is so handy. Magic!
 
Sounds like you had a very successful inaugural smoke.  For the ribs, I would think that you should be gnawing on bones around the 5 hour mark depending upon rib type, weight, smoking temp. Might be earlier or later. Also depends upon your preference - fall off the bone or retaining some pull.  A good way to check is the pull back from the end of the bone (shrinkage).  Another method is sliding a toothpick between the bone and the meat.  Easy in and out, they are done.  Mostly it is up to your preferences for doneness. A quick check at the 4 or 4 1/2 hour mark is advisable till you get used to your smoker.
 
Not bad... sorry, no pics... going to tweak the rub and approach a bit. Think I can do better with a couple tries to hone in on the right techi-Q...
 
It is a learning experience.  Since you are in a tweaking mode take notes.  Write down the meat, the weight, the ambient temp, the smoker temp, the amount and type wood used, the rub, the start and finish times and the results. This way you can repeat or alter depending upon your preferences.  A little time consuming but after a few smokes you will go by instinct.
